Sergeant McCabe’s Corned Beef and Cabbage is as authentic as it gets — mouth-watering salty corned beef, perfectly cooked carrots and cabbage, essence of bay leaf, and a few caramelized sweet onions thrown in for good measure. But what may surprise you is that he uses the unconventional method of an Instant Pot to get that decades old nostalgic flavor, rather than a traditional Dutch oven. Add a couple of extra baked Yukon gold potatoes as a creamy and hearty side and you’ve got a meal fit for any discerning Irishman.

Ingredients:

• 1 5-7 lb Corned Beef Brisket w/spice packet
• 2 large sweet onions, peeled and quartered
• 4 bay leaves
• 1 handful fresh thyme
• 4 cups water
• 5-7 Yukon Gold Potatoes, optional
• 2 small heads of cabbage, outer leaves removed, quartered
• 5 large carrots, peeled and cut into one-inch pieces

Instructions:

• In an Instant Pot, place corned beef, fat side up, on rack (cut into two pieces if necessary).
• Cover with approximately four cups of water.
• Sprinkle spice packet over beef, then place onion chunks, thyme and bay leaves on top.
• Cover and pressure cook on high for 2 1/2 hours – make sure relief value is on pressure and not venting.
• If baking potatoes: preheat oven to 425º, rinse potatoes, pierce each individual potato multiple times with a fork, wrap in aluminum foil. Cook potatoes in oven for approximately 1 1/2 hours or until tender.
• When Corned Beef is done, either remove from Instant Pot or let it depressurize in the keep warm setting if not serving for additional 1-2 hours.
• Open Instant Pot, remove meat, place on cutting board to rest.
• Remove thyme and bay leaves but keep juice.
• Place cabbage and carrots in beef juice.
• Pressure cook vegetables for 3 minutes.
• Strain cabbage, carrots, and onions.
• Slice meat against the grain, place on serving dish, and cover with vegetables.
• Serve with spicy brown mustard.

Note: If you are making my Corned Beef Hash the next day with leftovers, be sure to save at least a 1/2 cup of the beef juice from the Instant Pot before discarding.
