My grandmother loved egg salad. She could eat it for breakfast, lunch, or dinner. Whenever I’d stop by to visit her, she’d always have hard-boiled eggs in a glass dish in the fridge at the ready! As with so much in life I never appreciated this traditional New England favorite until I was much older. Luckily for me I watched her make it so many times I had a picture of the recipe in my head.

My grandmother always ate her egg salad with a side of pickles and tomatoes. But this creamy creation is perfect on a croissant for breakfast or as a side dish to a hearty lunch. Enjoy!
