The luck of the Irish was definitely with us when we finally perfected our Traditional Corned Beef Hash recipe. Filled with salty and earthy flavors, this simple and delectable dish is a hearty breakfast side to be enjoyed all year round.

Ingredients:

• 2 tablespoons unsalted butter
• 2 cups day old baked potatoes, skinned and cubed
• 1 teaspoon sea salt
• 1/2 teaspoon ground black pepper
• 2 1/2 cups cooked corned beef, shredded
• 3 tablespoons juice from cooked corned beef
• 1 cup day old cooked carrots, chopped (optional)
• 2 tablespoons Worcestershire sauce

Instructions:

• In a medium skillet, melt butter over medium heat.
• Add potatoes to skillet. Season with salt & pepper, toss in pan for 5-7 minutes until slightly brown.
• Add corned beef, juice, Worcestershire sauce. Cook, tossing gently, for another 5-7 minutes.
• Optional: add carrots and toss another 2-3 minutes.
• Serve immediately.
